Feature: What makes honey eternally tasty?

I was quoted in an excellent short piece for Discover Magazine by the ever-excellent Dr Darren Incorvaia, who is a brilliant bee scientist in his own right.

Honey hydrogen peroxide activity is a current focus of the research I’m supervising, with ongoing projects on this topic from recent REU-researcher Carlos Martinez-Mejia and current undergraduate researcher Tyler Washburn, and collaborative work with Lydia McCormick and Prof. Berry Brosi.
